It means to take the base cocoa ingredients and to grind them up over over hours of time until they become liquid chocolate.
This is done with a machine called a melanger.
Sugar or an alternative sweetener is added to be ground up at the same time.
Real chocolate uses the cocao bean and it’s parts.
This can be in the form of cocao nibs, which are the cracked up solid parts of the bean after roasting, or cocao solids which are just further cracked up and broken down solid parts of the cocao bean (the dark part of the cocoa bean).
Also real chocolate is ONLY made with cocoa butter, which is the key to making real solid tempered chocolate. Cocoa butter is obtained by pressing cocao beans until it releases it’s buttery goodness.
If you see palm or palm kernel oils in the ingredients list of a product, then it is not pure or real chocolate. Though it may still taste good.
Finally, a sweetener like sugar is usually added unless you are getting 100% baker’s chocolate.
If you’ve ever tried 100% bakers chocolate, you know that a little sweetener is usually preferred.
So, cocao solids, cocoa butter, and a sweetener are required to make real chocolate in it’s purest form.
We aren’t going to give away any trade secrets but we use a naturally occurring sugar alternative that is zero net carbs and calories, Erythritol.
This sweetener occurs naturally in various fruits, fermented foods, and mushrooms.
It looks and tastes like sugar but your body does not break it down nutritionally and your body naturally passes it without causing any increases in insulin or blood glucose.
Also, it is easy on the stomach compared to the man invented sugar alternatives. Those alternatives act like laxatives even in very small amounts.
That is not the case with our naturally occurring sweetener.
We still caution you from eating too much of our chocolate at one sitting.
Our bars are 3oz (85gm) which is almost a quarter pound per bar! Eating 2 bars in one sitting is close to half pound.
It is not wise to eat nearly half a pound or more of any kind of sweet treat. That much of any kind of sweet is likely to cause an issue or two with digestion, so indulge in a healthy fashion.

We try to use American suppliers and manufacturers when possible. Cocao only naturally grows close to the equator so 100% of it is imported to the USA and our cocao originates in Central America.
Many years ago the creator of Odyssey chocolate decided to make a change to eat healthier and to reduce sugar and carb intake.
This was not too difficult when the diet allows for meats and low carb vegetables but when it comes to sweets, that is where life gets tough.
Being a lover of chocolate above all other sweets, there was a major gap in this area so the creator tried all the bad alternatives which pushed them to research how chocolate is made.
From there the creator learned and made something that is truly great that they now intend to share with the world!
The hope is to make more flavors.
For now the flavors added to the chocolate are chosen on minimal allergy impact, maximum flavor enjoyment, and adequate cost to obtain.
The creator of Odyssey chocolate has many flavors of bars such as coconut, banana crunch, strawberry chipotle, and a smoked salt with Hungarian Paprika bar… to name a few.
For now, the idea is to start with great flavors that will be popular and hopefully Odyssey can grow into bigger facilities and operations to be able to support expanding into more flavors.
